- Different types of starters (stiff, old dough method and wet starters) and how to use them to control the flavour of your bread;

- Flours and their properties. I will explain how to combine flours to make light and crusty loaves. I will be including lots of visual examples, so you know what to expect when using different types of flours in your baking;

- How to make classic sourdough boule using 100% hydration starter and the old dough method;

- Kneading, folding and shaping;

- Room temperature and cold fermenation 

- How to troubleshoot problems with sourdough starters and the dough;
